造菜時常要把番茄皮去掉,其實番茄皮含豐富的番茄紅素、胡蘿蔔素和天然味精,煮菜時當調味品或用來做佐料,會令餸菜更加高纖有營好味。
把番茄脫皮之後,收集番茄皮放入攪拌機,加一點剛才用來煮番茄的湯水,用高速打成杯中的番茄皮醬便成。

Nutritious Soup II
Most people get rid of tomato peel before cooking. In fact, tomato peel is rich in lycopene, carotene and natural MSG. Using tomato peel as flavourings or seasonings will turn the dish into a high fibrous, nutritious and delicious one.
Gathering the peel from tomatoes in the blender, add a bit of broth used to cook the tomatoes a minute ago. Turn on high speed to blend the peel into paste.
Put the paste back to the pot of broth used to boil the tomatoes and bring to a boil using maximum heat.

番茄醬
番茄豐收,樣子美麗的賣給你,樣子不大好的用來造新鮮滾熱辣的番茄醬,再賣給你。
牛肉番茄2.5公斤切對開、過濾水3杯、玻璃瓶(約800毫升)連蓋一個。
把玻璃瓶連蓋洗淨,放入冷水中慢火煲滾消毒。
把番茄放入滾水裡煮3分鐘,見番茄皮開始脫落,撈起番茄浸一浸冷水降溫,脫皮後放入另一鍋裡再煮至收水。
撈起熱水中的玻璃瓶,把熱辣辣的番茄醬放入熱辣辣的玻璃瓶內,蓋好。 08Dv.施姐姐
Tomato paste
Every time when there is bumper crop, those good looking tomatoes will be sold direct to our customers while those not so good looking ones will be made into fresh tomato paste before selling to our customers in bottles.
Beef tomatoes 2.5kg (cut into halves), filtered water 3 cups, glass bottle 1 (800 ml with lid).
Wash the glass bottle and lid, put them in cold water, bring the water to a boil slowly for disinfection.
Put the tomatoes into boiling water and cook for 3 minutes. Get out the tomatoes as soon as the skin starts to come off. Soak them in cold water to reduce the temperature. After removing the skin, transfer the tomatoes into another pot and cook till liquid is reduced.
Get the glass bottle out from the hot water, pour the freshly made tomato paste into the bottle and tighten the lid. 感謝蔡小姐翻譯

要造一碗好味道的番茄清湯,除了材料好之外,還要為番茄脫衣。
牛肉番茄4個切對開、過濾水3杯。

Tomato broth (for 4 persons)
To make a bowl of tasty tomato broth, not only do we need to have carefully picked ingredients, we also have to remove the skin of the tomatoes.
Beef tomatoes 4 (cut into halves), filtered water 3 cups.
Bring the water to a boil, put in the tomatoes and cook for 3 minutes.
Get out the tomatoes and soak them in cold water for a while.

牛茄紅菜頭甘筍湯
第一茬 牛肉番茄 的樣子大小不一,但非常好味,趁紅菜頭和甘筍未過茬,造一個湯當早餐。
牛肉番茄兩個切角、紅菜頭和甘筍各半個切段,過濾水2杯。
用過濾水煮紅菜頭和甘筍,水滾後轉慢火煮10分鐘,取出,連同牛肉番茄一起放入攪拌機打成糊狀後,再倒到剛才用來煮紅菜頭和甘筍的湯裡,中火煮至滾即成。

Beef tomato with beetroot and carrot soup
Although the beef tomatoes in the first harvest come in different sizes, the taste is really good. So I would make a soup for breakfast while the beetroot and carrot are still in season.
Beef tomatoes 2 (cut into dices), beetroot ½, carrot ½ (both to be cut into segments), filtered water 2 cups. Cook beetroot and carrot in filtered water. Bring the water to a boil, turn to medium fire and simmer for 10 minutes. Take out the carrot and beetroot, put them into a blender together with the beef tomatoes. Blend them all well until puree forms. Pour the puree back into the soup that has been used for cooking beetroot and carrot. Cook over medium fire until it boils. Done.
Beef tomatoes have a very strong favour, so no need to add seasoning for this soup. 感謝蔡小姐翻譯

His appertiser is a small cup of wheatgrass juice.
For bread, it is just plain bread.
In the salad, there are Italian lettuce, cherry tomatoes, baby carrots, red clover alfafa and beetroot stem (diced).
